Most of the world’s coffee fruit is fully washed of its pulp before drying. We pay our pickers double to harvest our coffee fruit at the peak of ripeness then sun-dry it for 100 days. This natural process triples costs but leaves the raw beans coated with a “honey” residue that makes for a unique and smooth cup.
